They are packed full of fried flavor—all without actually frying! Baking the strips at a high temperature in butter gives the bread crumb coating that characteristic fried crunch and an extra yummy buttery flavor. Plus, the chicken stays nice and moist, perfect for dunking into your favorite sauces. If you need an easy dinner your family will love this is it!
1.5 pounds boneless skinless chicken breasts
2 cups panko bread crumbs
1 cup flour
2 large eggs
8 tbsp butter
2 tsp salt
1 tsp pepper (optional)
1 tsp garlic powder (optional)
½ tsp paprika (optional)
Preheat oven to 400 degrees. Melt the butter and pour it into a large baking sheet with a rim (like one you might use for cookies).
Slice chicken breasts into your desired strip size (1 inch wide is good).
Add the bread crumbs and half the salt (and half the other seasonings if using) to a pie plate or other shallow dish.
Add the eggs to a second shallow dish and beat well.
Add the flour and remaining salt and seasonings to third flat dish.
Dip the strips in the flour, then the eggs, and then the panko (making sure they’re well coated with the bread crumbs!). Then place coated strips onto your pan with the melted butter.
Bake for 10 minutes and then flips the strips over. Bake for another 10-15 minutes until they’re cook through.
