These mushrooms are a simple dish like that. Just one simple ingredient, bathed in a simple savory sauce, and roasted to bring out the sweet, caramelized texture and taste that lurks in veggies, just waiting to emerge from the heat of your oven.
All you have to do is encourage your family members to take one bite. The mushrooms themselves will do the rest.
INGREDIENTS
2 pounds mushrooms
1 tablespoon oil
3 tablespoons balsamic vinegar
2 tablespoons soy sauce (or tamari)
3 cloves garlic, chopped
1/2 teaspoon thyme, chopped
Salt and pepper to taste
DIRECTIONS
Preheat your oven to 400 degrees F/200 degrees C.
Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper.
Arrange mushrooms in a single layer on a baking pan and roast until the mushrooms are tender, about 20 minutes, mixing half way through.

Quick Tip: If the stems seem to be tough, cut them out, slice them and sauté them, saving them in an airtight container in your freezer. They will keep for up to one year. You can use these later in soups or casseroles.
