Can You Believe There Are Only 6 Ingredients in This Recipe?

Every year a few days before Christmas, some girlfriends and I get together for a cookie swap. Well, initially it started as a cookie swap, but now it’s more of a dessert swap. It’s our way of having multiple dessert options for our individual Christmas celebrations without slaving away in the kitchen multiple days to make a variety of sweets.

With the swap, we each make several batches of one dish. We bring tins to share so we all leave with 5-7 different desserts to share with our family. Because we’ve loved the different treats, we’ve started making recipe cards to share too. Not only is it an excuse to get everyone together for the holidays, we end up building our recipe book too!

Of course we have to test out the sweet during our get together – quality control of course! My favorite ice cream is mint chocolate chip, so when I saw these green round things I knew it must be that flavor. Sometimes it’s just to chilly in the winter to evn think about ice cream, so these cookies give you that same flavor in a warm avenue. You have to try them!

Quick tip: Don’t have chocolate chips? You can up the Andes mint baking chips to 1 ¾ cup.
