This Skillet Chocolate Chip Cookie Proves That Sometimes Simple Recipes Are The Most Delicious
I have a major sweet tooth—like wake up in the middle of the night dreaming about ice cream and donuts sweet tooth. But if I had to pick just one sweet to eat for the rest of my life it would be this skillet chocolate chip cookie. From the first time I had it at my now husband’s grandma’s house I knew it blew any other desserts I’ve had out of the water.
As Grandma Jane used to say “the danger in this recipe is in the simplicity.” And she was right! The first time I visited her home for dinner she had planned on making an elaborate fruit swirled cheesecake for dessert. But when she discovered only expire cream cheese in her fridge she had needed to improvise.
While my then boyfriend and I mingled with his family she set to work on finding a suitable replacement for the delicious dessert she had planned. Not that any of us knew, of course—she was cool as a cucumber! She didn’t let any of us in on her secret until well after we’d cleaned our chocolate covered plates.
And I have to say it—I’m pretty sure that cheesecake wouldn’t have been able to hold a candle to this gigantic cookie. It’s over the top amazing.

Quick tip: If you don’t have a cast iron skillet this dough can be made in a regular mixing bowl and then baked in a 7×11 inch pan.
