We’ve Got the Perfect Dessert For Spring – Get Ready To Make It Any Chance You Get
How do you guys feel about no bake desserts? Would you rather love them or leave them? For me I’ve always had a special place in my heart for these little sweet tooth wonders. They never once go in the oven but yet can rival the best cakes, cookies and more! And this no bake cookies and cream cheesecake has to be one of the best no bake treats I’ve tried.
It’s a spin on a recipe my grandma used to make us grandkids almost every time we’d visit in the summer. She called that dessert chocolate lasagna, and we could not get enough of it! She’d make a big pan and between us 6 kids we could almost polish the whole thing off by the end of a day there.
(I’m sure our parents loved that!)
But that dessert was essentially layers of chocolate sandwich cookies topped with a layer of sweetened cream cheese, chocolate pudding, and then whipped topping. My favorite part was always the cream cheese layer combined with the cookies. So that got me to thinking… how could I recreate that?

Quick tip: To ensure nothing sticks when removing the sides of the spring form pan grease the sides lightly with cooking spray before assembling the cheesecake.
