I have two foods that are my all-time favorite breakfast foods. One is deviled eggs, and the other is anything Tex Mex! I love spicy southwest flavors and that great chipotle taste. That’s how I got the idea to combine my two favorite things into one.
I blended chiles, corn, and taco seasoning into my egg yolks, and the result was soooo good. Even my family is a huge fan of them at holiday parties. However, I usually keep them all to myself and treat myself to an extra yummy breakfast! We all deserved to be a little spoiled every now and then!
Ingredients:
6 hard-boiled eggs, peeled
2 tablespoons chopped green chiles undrained
2 tablespoons whole kernel corn, drained
2 tablespoons green onions with tops, minced
2 tablespoons shredded monterey jack cheese
2 tablespoons taco sauce
1/8 teaspoon salt
Instructions:
Cut eggs in half lengthwise. Remove yolks; set whites aside. Mash yolks with fork. Blend in chilies, corn, green onions, cheese, taco sauce and salt.
Refill whites, using 1 heaping tablespoon yolk mixture for each egg half.
