Cookie Monsters, Anyone?

You can vary the appearance of these cookies by how many eyeballs you place on them, and where they are located. Remember, these are monster cookies, so they are not expected to have a realistic appearance. Be creative in your placement.

It would also look even more festive for your party if you made batches of these cookies in several different colors. Mix them up, with some having only one eye, and others having many eyes. The kids and adults at your party will get a kick from how crazy they look, and everyone will love the soft texture and buttery taste.

 

INGREDIENTS

1 box Yellow Cake Mix

½ cup butter softened

½ tsp. vanilla

1 8-oz. bar cream cheese softened

1 egg

Green food coloring

Powdered sugar

Candy eyeballs

 

INSTRUCTIONS

Beat butter, vanilla, egg and cream cheese until fluffy.

Mix in cake mix (DO NOT prepare the cake as directed on the box, just add the dry cake mix to the cream cheese mixture). Add green food coloring until it’s the color you want. I used neon green. Chill for 30 minutes.

Roll into balls and dip in a bowl of powdered sugar.

Bake at 350 for 10-12 minutes. While still warm from the oven, push eye balls into the center or all over the cookie. ENJOY!
