Words can’t even describe how delicious this easy cake mix lemon loaf is! It’s so moist, tender and packed with lemon flavor that no one will ever guess it’s not totally homemade. But thanks to doctoring up a cake mix with a few other ingredients you’re rewarded with a shockingly simple loaf cake that tastes like a million bucks!
Plus, when you add on the optional glaze it becomes hands down one of the tastiest desserts you’ll ever it. The sweet glaze is the perfect complement to the bright, tangy lemon flavor. A slice is perfect with a cup of coffee in the morning or as dessert.
1 box lemon cake mix
1 box instant lemon pudding (3.4oz)
4 large eggs
1 cup water (or milk)
1/3 cup vegetable oil
2 cups powdered sugar
3-4 tbsp lemon juice (preferably fresh)
Preheat oven to 350 degrees
Spray a 9×5 loaf pan with nonstick spray.
In a large bowl combine all the ingredients (either by hand or with a mixer) until well mixed.
Pour into prepared pan and bake for 50 minutes or until a toothpick inserted in the center comes out clean.
Let cool completely and then coat with glaze if using.
