The meatloaf itself is perfect—just enough spices and add-ins to give it plenty of flavor. And the addition of barbecue sauce in the meat itself help keeps it even more moist and flavorful. Then creating a barbecue glaze from barbecues sauce and chicken stock just takes it right over the edge. It’s so rich, tangy and delicious that everyone loves it.
1 ½ pounds lean ground beef (can substitute half ground pork or turkey)
½ cup diced onion
½ cup diced celery
2 tsp garlic powder
¼ cup milk
½ cup breadcrumbs
1 ½ cups barbecue sauce divided
½ cup chicken stock
Preheat oven to 375 degrees.
Mix first 7 ingredients & half cup of barbecue sauce together in a large bowl until well combined.
Form into a loaf shape and place into a greased loaf pan.
Bake for 40 minutes.
Make barbecue glaze while loaf is baking by heating up remaining sauce with chicken stock in a pan over medium heat until it begins to simmer. Spread/pour over cooked meatloaf.
Slice and serve.
