Ditch The Can! This Easy Homemade Tomato Soup Is The Best We’ve Ever Had

This is the perfect quick, easy and semi-healthy tomato soup to fancy up your grilled cheese night! Really, ditch the canned soup and spend an extra half hour to make this homemade version—it is so bursting with flavor you’ll never eat another tomato soup. And how could it not be?

The combination of good quality tomatoes, butter, fresh basil, and garlic means this soup has layers of flavors that will keep you and your family coming back for more. And when the most difficult part of a recipe is chopping up an onion and garlic you know it’s going to be a simple one. Make this incredibly tasty soup for your family today!

 

Ingredients (mix up order)

3 tbsp butter

1 onion chopped

6 cloves garlic chopped

2 cans Italian tomatoes (around 70 ounces)

3-4 cups vegetable or chicken stock

½ bunch fresh basil (1 cup loosely packed)

½ cup half and half

Salt and pepper to taste

Shaved parmesan cheese

 

Directions

In a large 5-6 quart pot, melt butter over medium heat and add onions; cook until translucent; 3-5 minutes.

Add garlic and cook for 3-4 minutes.

Add tomatoes and stock and bring to a boil. Reduce heat to a simmer, cover and cook for about 20 minutes.

Add basil (tear the leaves and stems). Puree with an immersion blender. Turn off the heat and add cream while stirring. Serve with salt, pepper and Parmesan cheese to taste.

      Hi Robert, thanks for pointing out a blunder in the editing process! 🙂 The recipe has been fixed now. Use 3-4 cups vegetable or chicken stock; the amount depends on the desired consistency. Add more if you’d like a thinner soup – personally I prefer this soup thick and creamy! 🙂
