One Bowl Of This Soup Will Leave You Wondering Where It’s Been All Your Life

I grew up with a family that was pretty much allergic to anything spicier than mashed potatoes. Think I’m joking? I once bought mild salsa to bring in to school as a snack but my brother ended up trying it instead. Then bawled for a solid five minutes. He was five—but still. He’d never stand a chance against this slow cooker chicken tortilla soup. Which is a shame because it is tasty!

Because my family was more meat and potatoes than hot wings and sriracha I had to get my spicy food fix at other places like friends’ houses and a few of the local restaurants whose menus weren’t solely designed to cater to the spice-averse palate.

Then I went to college in Austin, TX and my whole life changed! Or should I say it was a lie? The foods I ate back home that I thought were spicy were nothing compared to what I ate in Austin and other spots in Texas.  I can distinctly remember sitting in a Mexican restaurant with my roommate with tears streaming down my face after trying her dish. As a native Texan she couldn’t help laughing at my predicament.

Fortunately, this delicious soup doesn’t have quite that level of heat but it still packs a TON of flavor.

Quick tip: To make this a creamy tortilla soup replace one cup of chicken stop with one cup of half and half.
