Who says melted swiss cheese is best on a Rueben sandwich? In my opinion, swiss cheese is not given enough credit, especially really good quality swiss. It’s both sharp, sweet, and it melts beautifully on breads, meats and potatoes!

I love the creamy and tangy combination. Swiss cheese was created in Emmental, Switzerland many, many years ago, but just about everyone recognizes the pale yellow cheese with its infamous holes. Why, even the mice like it!

Whether you need to warm up on a cold evening, or you want some melty cheese goodness on a warm summer night, it’s time to whip up some fantastic homemade real potato casserole made with…yep, swiss cheese!

No, this is not your average casserole you aunt makes that’s loaded up with potato chips, crunchy bits, or canned soup. Don’t get me wrong, I enjoy that au gratin potato casserole every once in a while too, but this recipe is different.
