Is This A Side Dish, Or A Dessert?

Here’s an idea! Set it out with whatever meat you are serving, because it pairs exceptionally well with most kinds of meat, especially those served at holiday gatherings, such as ham, turkey, roast beef or duck. Then let your guests figure out exactly what it is for themselves.

Hey, at least it will help steer the dinner conversation away from the big three:  money, politics and religion.  Just imagine how peaceful and civilized your holiday table will be this year with your Cousin Bubba and your Aunt Louise both having their mouths so full of this that they aren’t even thinking about arguing. All they are doing is complimenting you on this fantastic new dish!

 

INGREDIENTS

1 cup unsalted butter, softened

1 cup sugar

6 eggs

2 (20-ounce) cans Dole crushed pineapple, undrained

12 pieces day-old white bread, torn or cubed

 

INSTRUCTIONS

Preheat oven to 350 degrees Fahrenheit.

With a hand mixer, beat together butter, sugar, and eggs.

Add crushed pineapple to cubed bread. Pour egg mixture over bread, mix until all bread is covered.

Pour into ungreased 9×13 pan and bake for 45-50 minutes or until top begins to brown

Quick Tip:  If you want to kick it up a notch, add some spices like cinnamon, nutmeg or allspice to the egg mixture before you pour it over the bread. If you would like to take this dish in a more savory direction, to balance out the sweetness, try a bit of chili pepper or paprika.
