I think that Chelsea must love Mexican food as much as I do, because she has come up with an excellent recipe for a creamy chicken enchilada chili that you can cook in your crock pot. It is cream cheese that is melted to give this chili its distinctive color and creamy texture.

I think that you could consider this Mexican comfort food. I can picture my friends and me sitting around the fire pit in the evening, eating big bowls of it and drinking Dos Equis beers.

I think it is a bit of a misnomer to call this chicken enchilada chili. That implies that somewhere along the line in eating this, you are going to run across something resembling an enchilada. This is not the case here. There’s not a tortilla in sight! I do know for a fact, however, that many Mexican food dishes are served with tortillas on the side, which you use to scoop up portions of food and eat it, together with the tortilla. That’s how I would serve it, I think.

You can tailor the spiciness of this chili to your individual preferences by selecting either a mild, medium or hot enchilada sauce. This is very similar to the way salsas are offered in different spiciness levels in the stores and restaurants.

Quick Tip:  How hot do you want it? If the basic recipe doesn’t give you enough spicy heat for your tastes, try adding jalapenos, green chilies or chipotle chili powder.
