We’re Obsessed With This Delicious Side Dish!

For as long as I’ve known my husband he’s hated pretty much any vegetable that he’s tried—or at least strongly disliked them. And as someone who for the most part tolerated vegetables as a necessary evil but definitely not first choice food I regret to say that our first few years together we rather light on the healthy stuff… it was easy to go right along with his veggie averse ways when I wasn’t too fond of them myself.

But as the years went on and our first child was born I was determined to turn our eating habits around for the better—we weren’t going to pass along our anti-vegetable tendencies to our kids! So I made a concentrated effort to look for more veggie recipes that went beyond just trying to force ourselves to eat them raw (which wasn’t fun for any of us).

That led me to realizing just how tasty vegetables can be when they’re roasted. Who knew that just taking off enough of the bitter raw edge and crunchiness could make them seem so much more appealing?

And when I found this recipe for parmesan garlic zucchini fries, even my husband had to admit that it was downright delicious—huge praise from a guy who’d go out of his way to avoid anything green on his plate.

Quick tip: To minimize the mess and be sure the zucchini doesn’t stick line your pan with parchment paper.
