Sweet, Tart And Tasty 

Lemon desserts are among my favorites. You see, I have never been a big fan of really sugary sweet things. I want to taste something besides sugar. What is the point of using any other ingredients in preparing a dish if the cloying sweetness of too much sugar overpowers their taste?

When I have a cinnamon roll, I want to taste the cinnamon, and then notice it is sweet, like an afterthought. Seeing Nicole’s splendid recipe for these lemon and coconut bars made me feel that there was a good chance I would be tasting the lemon in them, at least as much as the sugar.

That being said, however, there is a LOT of sugar in this recipe – a total of 3 cups of three different kinds! Don’t pass out on me here, but there are also 2½ sticks of butter. Yes, Paula Deen DID have a hand in these!

These exorbitant quantities might horrify you. Nicole herself said she felt that way, at first. “….but when I tried one I was so happy and that horrified feeling went away quickly!” Hey, these are NOT health food, okay? Get over it and control yourself – just have one. Nobody said you had to eat the whole pan in one sitting, did they?

Quick Tip:   Being that these are gooey bars, that bottom layer is likely to get a bit on the soggy side. To keep this from becoming a problem, try baking the crust for about 10 minutes and letting it cool completely before you add the filling and the topping.
