I have yet to meet a person from the south who doesn’t love a bowl of juicy, well seasoned collard greens! I’m talking about greens so good that you will gulp down the leftover juices from the pot! Good collard greens are so good for the soul, and they’re the real definition of classic comfort food.

Southern style collard greens are a must-have at our holiday table. It just doesn’t quiet feel the same without them. Really, I’d have them at every meal. Or at least every Sunday meal, for sure.

Growing up, my grandmama use to prepare collard greens almost every Sunday, and for a while it was the only vegetable I’d ever eat. Like, a really long while! I can remember eating bowl after bowl of these things until I felt sick.

I still love collard greens to death today, but I’m real picky as to how they should be fixed. As would any good southerner!  I hope that you will enjoy this recipe and go ahead and have two bowls. In case you were wondering, a serving of collard greens have more calcium than milk!
