Cheesy Muffins Get Even Picky Eaters to Gobble Down Their Veggies

If you’ve ever had a picky eater in your family, you probably know exactly how annoying it is to try to cook around their tastes while still getting them all their nutrients. At some point, you just want to force them to eat their vegetables, even if you know that’s not possible. That’s why parents and other home chefs have been figuring out ways to hide veggies in other recipes for decades. This recipe is a brilliant way to get kids to eat their veggies in my opinion, and it’s because of a couple of things.

First, this recipe is filled with cheese, which makes even picky eaters sit up and pay attention. Second, the fun muffin shape is often attractive to little kids, who love food that is their size. Combine those two things together with some broccoli and tomatoes, and you’ve got a side dish, or even a main course for lunch, that moms and kids can all love. I’ve made this recipe once to try it out before recommending it, and I have to admit it’s a tasty way to cover up that veggie flavor. Quick tip: Because these muffins were designed for children, they lack a lot of seasoning. If you want to make these for adults, I recommend experimenting with some salt, pepper, garlic powder, paprika, or your favorite spices.
