Portable Boston Cream Pie in a Cooke Crust is The Perfect Dessert Marriage
Every now and again, a recipe comes along that makes me stop and say “Wow!” There’s something so creative about people who bake, especially when they get to thinking up creative ways to enjoy old favorites. Over at Life Love and Sugar, the mastermind Lindsay has come up with an amazing way to enjoy Boston Cream Pie. If you love cupcakes, mini poodles, tiny cars, or the smaller and cuter version of anything, you’ll love this dessert.
You start off with a delicious chewy cookie cup, fill it with Boston Cream filling, and top it off with a chocolate ganache. It ends up looking like a mini Boston Cream Pie cup, and tasting like heaven. I will admit that this recipe has quite a few steps compared to the recipes I usually share – but it’s worth the extra trouble. These are so sophisticated, perfect for special events like bridal showers or adult birthday parties. Yet they don’t sacrifice a bit of delicious indulgent flavor. I have only made these once for a party, and I was so sad to share once I got a taste! I think I’ll be putting these cookie cups on my birthday wish list for next year!

Quick tip: It’s okay if the cookies look just a tad undercooked when you remove them from the oven. They’ll finish cooking on the counter while they cool.
