This Side Dish Will Get You in the Mood for Fall

Mac and cheese is a staple in our household. I try my best not to use the easy blue box all the time, but sometimes it’s just so easy! We were at my mom’s house and she was testing out this new recipe she found online. Her favorite season is fall and she just loves pumpkin. Thanksgiving is her favorite holiday of the year!

She was whipping this recipe up when I visited her one day a few weeks ago. She had been in the kicthen earlier on one of her baking sprees, but she was in the mood for some comfort food for lunch. My husband and dad had gone golfing earlier, so they barged in the house with emty stomachs.

My mom had always gone to the store with this dish in mind, so she had all of the ingredients. As the cheese and pumpkin mixed together and heated up, the smell in the kitchen was divine. Even better than the smell, when we let it cool (always one of the hardest things for me to wait on), the rich and creamy texture with that hint of sweetness just really hit the spot.
