Festive Fall & Winter Breakfast Casserole  

Do you want a super-easy casserole that tastes good enough that you would serve it at a holiday event? Look no further, because you just found exactly that! This is bone-deep comfort food. Many of us grew up eating fresh-from-the oven cinnamon rolls with melty, ooey-gooey icing. You could smell them baking in the farthest reaches of the house! In my house, you had to be there right when they came out of the oven, or you didn’t get a whole cinnamon roll to yourself. The last two into the kitchen had to share one.

Vera’s amazingly good casserole has two distinct advantages over plain cinnamon rolls. First, there’s a layer of streusel on top. Oh, don’t worry, the icing is still there, too! Second, there’s a layer of pumpkin pie smack dab in the middle of this thing. I told you it was amazing, didn’t I? Last but not least, there’s a bottom “crust” made up of – you guessed it! – honest-to-goodness cinnamon rolls. Somebody stick a fork in me, I’m done!

Could you have ever thought of such a rich and decadent combination of ingredients? I know it would never have crossed my mind to put pumpkin pie filling in the middle of a cinnamon roll.
