Ingredients
16 oz short pasta (like rotini)
¾ cup cucumber dices small
1 ½ cups broccoli florets roughly chopped
1 pint grape tomatoes halved
Handful of large leaves of your favorite lettuce (like romaine) roughly chopped
½ cup sliced black olives
¾ cup feta cheese cubed
Salt and pepper to taste
1 cup Greek vinaigrette (your favorite brand)
Instructions
Cook pasta according to package directions.
While pasta is cooking chop up veggies.
Rinse pasta in cold water to cool in a colander—shake to remove excess water.
Mix all ingredients in a large bowl.
Add in dressing and stir until evenly coated.
Serve.
