Can You Hear It? This Recipe Is Calling Your Name
When I think of spring and summer foods my mind instantly goes to strawberry shortcake and cold pasta salads. I’m not sure if that’s a Midwest thing (I grew up in Wisconsin) or it’s fairly universal but I have yet to meet a person who doesn’t like those things—especially on a hot summer day. And while I’ve tried my fair share of pasta salads this easy Greek Pasta salad is by far my favorite.
The first time I tried it I was home from college on summer break. I was over at my best friend Brooke’s house for a cook out with her family. Her dad was grilling up burgers and brats and her mom had made a few delicious sides. One was her always popular potato salad and the other was a new pasta salad recipe a co-worker recommended.
Not one to ever pass up a pasta salad I made a beeline for it before even stopping at the grill. I piled some onto my plate and dug in and Brooke and I sat catching up about what had gone on in our lives since we were last together. I’m pretty sure I only caught like half of what she said.
I was too busy chowing down on this epic side dish.

Quick tip: Mix this salad up with your favorite veggies! Omit the broccoli for bell peppers or add in zucchini. It’s customizable to your tastes.
