Easy dessert recipes are great, especially if you find one that is perfect for just about any occasion! It looks super impressive (hello, it’s mousse!) but is so low-maintenance it’ll be your go to treat for those times when you want to put in basically zero effort. And the good news is that even though it’s simple it still taste so amazing.

The chocolate flavor is font and center—it’s rich and sweet (but not too sweet) and makes each bite seem like a little bit of chocolate heaven. Plus, it’s a great balance of creamy, thick and fluffy—meaning you’ll feel satisfied after eating it without feeling like you just ate a heavy dessert. It’s seriously the most delicious treat!

Ingredients

2 eggs

¼ cup sugar

2 ½ cups cold heavy whipping cream (divided)

6 oz semi sweet chocolate

Instructions

Beat eggs and granulated sugar together for 3-4 minutes with a hand or stand mixer.

Heat 1 cup of heavy cream in a small sauce pan until hot (not boiling). With mixer on low pour hot cream slowly into egg and sugar mixture until combined.

Add egg/sugar/cream mixture back to saucepan over low heat and stir constantly for 5 minutes until thickened—don’t let boil.

Remove from heat and stir in chocolate until melted.

Cover and refrigerate until chilled—about 2 hours. Stir occasionally.

When it’s completely chilled and firm use whisk attachment on your mixer to whip remaining heavy cream until stiff peaks form. Remove chocolate mixture from fridge and using a spatula fold into the whipped cream until smooth.

Serve or refrigerate until ready to serve (best within 1-3 days).
