Cheesecake You Can Eat Without a Plate? Too Good To Be True!

When I think of cheesecake, I automaltically think of a big slice of cake that is creamy and delicious but definitely requires a plate. Then I tried this recipe and it totally changed how I see cheesecake- if you make it as a bar, you can eat it anywhere! Forget a fork and a plate, these bars are completely portable and can be eaten anytime, anywhere (and I highly reccomned bringing them with you wherever you go…).

These coconut cheesecake bars also have no messy graham cracker crust but instead sit on top of a mix betwen a pie crust and a cookie curst- it is amazing! It is also super simple to make and doesn’t need to be pre baked before pouring on the cheesecake. A few quick ingredients in a bowl and your crust is ready to press into the pan!

The filling and main part of the coconut cheesecake bars is also easy to make. All of the ingredients are whisked together and then poured onto the crust. A little time in the oven and they are ready to eat! The tropical flavors of coconut and the creaminess of cheesecake all come together happily in this amazing bar recipe.

Quick tip: While I know it is hard to wait, let the bars cool completely before cutting them. They will be much neater and prettier when cut cold.
