If you’re looking for a quick and easy dinner with some Mexican style flare this Easy Chicken Enchilada Recipe is for you! They’re bursting with a ton of different flavors and textures thanks to the chicken, cheese and beans, which means there’s something for everyone to love. Plus, they come together in about 45 minutes—a win on busy weeknights.
This is my family’s most requested dinner, and everyone I make them for instantly falls in love with them. If you need something to shake up your dinner time routine this is the perfect recipe to try!
Ingredients
2 tbsp vegetable oil
1 small white onion, peeled and chopped fine
1.5 pounds boneless skinless chicken breasts, diced into small 1/2-inch pieces
Salt and pepper
1 4oz. can diced green chiles
1 15.5oz. can black beans or lentils (optional)
8 large flour tortillas
3 cups shredded cheese (Mexican blend or cheddar)
1 can 10-15oz. red enchilada sauce
Instructions
Preheat oven to 350 degrees. Grease a 9×13 baking dish.
In a large frying pan heat oil over medium-high heat. Add onion and saute for 3 minutes, stirring occasionally. Add diced chicken and green chiles, and season with salt and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through. Remove from heat and set aside.
To assemble the enchiladas, set up an assembly line including: tortillas, enchilada sauce, beans if using, chicken mixture, and cheese. Lay out a tortilla, and spread two tablespoons of sauce over the surface of the tortilla. Add beans in a line down the middle of the tortilla, then add in a spoonful of the chicken mixture, then sprinkle with 1/3 cup cheese. Roll up tortilla and place in the greased dish. Repeat with the remaining ingredients. Then spread the remaining enchilada sauce on top of the tortillas, and sprinkle on the remaining shredded cheese.
Bake uncovered for 20 minutes. Remove from oven and serve immediately. Garnish with your favorite toppings (tomatoes, lettuce, cilantro, sour cream, etc.)

Quick tip: Use pre-cooked chicken (rotisserie works great!) instead of raw—to do this simply cook onions and chiles for 5-6 minutes until starting to get tender. Then mix in chicken to heat through. Assemble as directed.
