Moist, Chewy Cookies Surrounding Creamy Marshmallow Fluff – What’s Not to Love?
Do you remember eating Little Debbie Oatmeal Cream Pies as a kid? I probably ate my weight in them at least once a month for several years, and I regret nothing. From the chewy oatmeal cookie to the sweet marshmallow filling, I couldn’t get enough. Now that I’m all grown up, I do still crave a good oatmeal cream pie from time to time. But I also dream of a cookie with a few less preservatives and maybe a hint less sugar as well. Enter this Oatmeal Sandwich Cookie recipe from Spicy Southern Kitchen. This recipe is so good I need to break it down just to keep from overwhelming myself.
First, you have a moist and airy cookie, made perfectly chewy by the addition of solid shortening (like Crisco), filled with delicious flavors like nutmeg and cinnamon. Pair two of those and then add a deliciously creamy marshmallow fluff filling. And the best part is that you can pile on the filling as much as your heart desires. I can’t get enough of this cookie, and though it does take a little more work than your average cookie, the recipe makes about four dozen sandwiches, so you’ll have plenty to share (or not!).

Quick tip: Want to keep the marshmallow crème from sticking to the knife or spatula as you spread the filling? Dip the knife or spatula into very hot water right before spreading.
