These Make Ahead Breakfast Burritos Are A Lifesaver On Busy Mornings

My family does not like cereal for breakfast. They want something hot and heart and these easy breakfast burritos are perfect for them! They are jam packed with flavor from sausage, cheese, veggies and plenty of seasoning. They’re a great mix of texture, too—every bite is different!

They’re perfect for those who love a savory breakfast. It’s like a fiesta in your mouth with every bite! Plus, these are great to make ahead and reheat so you can have a hot and delicious breakfast even on your busiest mornings. I always have some in my freezer. Try them out for your family!

 

Ingredients

12 medium sized flour tortillas

14 eggs

1 pound breakfast sausage

2 cups shredded cheddar cheese

1 small bell pepper chopped

1 small yellow onion chopped

1 tbsp cumin

1 tsp garlic powder

1 tsp onion powder

½ tsp pepper

½ tsp salt

1tbsp olive oil

Instructions

In a large skillet heat oil, onions and bell peppers until they begin to soften – about five minutes.

Add in sausage and cook until sausage is no longer pink.

Beat eggs in a large bowl and mix in the seasonings.

Pour eggs over sausage and veggie mix and cook for 5 – 7 minutes or until they’re cooked to your liking. Mix in half of the cheese and stir together to melt.

Remove mixture from heat.

Divide mixture evenly among the tortillas and sprinkle with remaining cheese.

Roll up the tortillas into burritos.

Serve immediately with desired toppings.

Quick tip: To make ahead of time assemble burritos and then wrap in plastic wrap and then aluminum foil and place in a freezer bag. They are good for up to 3 months. To warm up remove foil and plastic wrap then wrap in a paper towel and heat up for 2 minutes.
