Ingredients:

Meatloaf:

2lbs ground beef

2 eggs

1 tbsp dried oregano

2 tbsp dried minced onion

1 tsp dried coriander

1/2 tsp dried cumin

1/2 tsp black pepper

2-1/2 tbsp Worcestershire sauce

2 tbsp Ketchup

1/2 cup bread crumbs (I used seasoned)

6 Mozzarella cheese sticks

Sauce:

8 oz tomato sauce

2-1/2 tbsp brown sugar

1 tsp apple cider vinegar

1 tsp onion powder

1/4 tsp coriander

1/4 tsp black pepper

Pinch of salt

Directions:

-Preheat oven to 350F and lightly grease a large loaf pan

-In a medium bowl add all your ingredients for your meatloaf.  Mix thoroughly so all ingredients have been incorporated.

-On a flat surface, place your meatloaf mixture and flatten slightly.

-Lay the six cheese sticks on top of the meatloaf mixture (lay them out so you have three cheese sticks across in two stacks—will look like three extra-long cheese sticks)

-Roll up meatloaf, pinch ends to ensure cheese stays tucked inside and set into prepared loaf pan

-Mix together all sauce ingredients and pour all over the meatloaf until it’s covered

-Bake for 45 minutes uncovered, then pull from oven and drain excess juices

-Return to oven covered for 20-30 minutes more until the sauce has glazed over

-Serve with your favorite side

Quick tip: Make sure to let the meatloaf rest for 15-20 minutes after it’s done cooking. This helps you slice it neatly and prevents the cheese from melting out everywhere when you serve.
