Ingredients

1 cup all-purpose flour

¼ cup cornstarch

¼ tsp baking soda

½ tsp baking powder

¼ tsp salt

1 cup buttermilk

1/3 cup unsalted butter melted

1 room temperature egg separated

1/3 cup sugar

1 ½ tps vanilla

 

Directions

With a mixer (or a whisk and a lot of elbow grease) whip up the egg white until stiff peaks form. Set aside

Combine all dry ingredients (except sugar) into a medium bowl and mix well.

Add the wet ingredients and mix until just combined—some lumps are okay.

Fold in egg whites until just combined—it is important to not overmix for the waffles to rise properly.

Let batter rest for 30 minutes.

Follow directions on your waffle maker to cook the waffles.

Serve with syrup, fresh fruit, powdered sugar, etc.
