Even if you start out by choosing these apple slice “cookies” as a healthy dessert, it is the taste that is going to bring you back to them, again and again. After all, it isn’t going to seem much like a dessert if it doesn’t give you that same sweet satisfaction that a dessert would give you.
If you choose to serve these as a healthy alternative snack for your kids, you don’t have to worry about them not liking the taste. With their sweet apple, smooth peanut butter and crunchy walnuts, together with a sprinkle of coconut and chocolate chips, this soon will become one of their favorite snacks.
INGREDIENTS
1 Red Delicious Apple
¼ cup Peanut Butter
1 to 2 Tablespoons Unsweetened Coconut Flakes
1 to 2 Tablespoons Chopped Walnut Pieces
1 to 2 Tablespoons Mini Chocolate Chips
Lemon Juice (optional)
INSTRUCTIONS
Cut the core from the apple (or cut out the cores from each piece after slicing).
Slice the apple into ¼ inch slices using a large knife.
Optional – If you’re worried about the apples turning brown, place the slices in a zip lock bag and toss with a squirt of lemon juice.
Set each of the apple slices onto a sheet of paper towel and blot the tops dry with another paper towel.
Spread a layer of peanut butter on each apple slice.
Then top with a generous amount of coconut flakes, and some walnuts and mini chocolate chips.

Quick Tip: Make sure that you blot the apple slices really well, on both sides, with a paper towel before loading them up with the other ingredients. Apples are so juicy that they will be hard to hold if they are not well-dried. Also, it will be next to impossible to spread the peanut butter on them if they are still damp.
