So Good You’ll Smack Your Momma!

What’s better for a between-meals snack or a satisfying dessert than blackberries? Why, blackberries encased in a crumbly crust, surrounded by custardy filling, of course! These bars are some seriously good eats, and you could try justifying over-indulgence by the fact that you would be getting one of your daily servings of fruit.

These bars are so easy to make that you will want to keep this recipe handy and try it with different fruits. Peaches, pears and apples might even work, but because it takes them so long to cook, you should dice these fruits into small cubes instead of slices. Imagine the delight of your family when you bring these delicious treats to the table after dinner!

Because these are made in a 9’ x 13” baking dish, and you can cut the bars into different sizes, this recipe makes a good dessert to take to a pot-luck event, as you can get a good number of servings from it, without having to double or triple the recipe. If you want an easier clean-up, plus the ability to remove the entire dessert from the pan before cutting it, line your pan with parchment paper, allowing a sufficient length of paper to extend over the ends to serve as a handle for lifting.

Quick Tip:  When working with berries, fold them very gently into your filling base so that their juices don’t discolor the mixture.
