Put Down the Latte and Sink Your Taste Buds into This Pumpkin Spice Cake

Who doesn’t love autumn? After a long and hot summer, the cooler weather is always welcome. Taste buds start craving cozy, spiced flavors rather than the bright and fun flavors of summer. I think this is why the pumpkin spice latte craze is so ingrained. It’s the one time of the year when that comforting warmth is perfectly suited to your surroundings. Want to enjoy your PSL in a new way this year? Check out this Pumpkin Spice Buttermilk Cake by Cozy Cakes Cottage.

I won’t tell you that this cake is going to be thrown together in two minutes flat – but I will tell you that the rich, complex flavor of this cake is the most delicious thing you’ll taste all autumn. Filled with nutmeg, ginger, cloves, cinnamon, and pumpkin, this cake has all the depth of the season, while still being a decadent dessert. Add in buttermilk and plenty of brown sugar, and you’ve got a moist, bready cake that could almost be eaten for breakfast if you throw convention to the wind. Huge thanks to Cozy Cakes Cottage for something so amazing to kick off my autumn. I can’t wait to try this recipe out as cupcakes for bake sales!

Quick tip: To get the right texture and avoid crumbly, dry cake, be sure to have the butter and eggs at room temperature before using.
