Chocolate and Marshmallows Bakes Into A Cookie? I Must Be Dreaming!
Gooey marshmallows and melted chocolate chips all wrapped up in a perfectly baked cookie- now how could anyone resist that!? It has been a long time since I have been this excited about a cookie recipe but just imagining that campfire s’mores taste inside a cookie has made my heart beat faster (seriously, I cannot wait to eat more of these cookies).
S’mores are such a perfect dessert but you usually need a fire to cook them up. Not true anymore with this great recipe. Skip roasting marshmallows on a stick and instead, put them inside cookie dough! You can have s’mores all year round this way! Making s’mores in cookie form is not only more convenient but also way less messy. All of that sticky marshmallow and chocolate is baked inside a nice neat cookie that you can take wherever you please!
After making the cookie dough, the mini marshmallows are stuffed inside by hand and then the dough is chilled. Cooling the dough is key and, after baking, cooking the cookies quickly is also recommended. Both of these little tricks help the marshmallows stay nice and fluffy and not completely melt away ( a trick that sets this s’mores cookie recipe apart from any other). So put out that campfire and turn on the oven- there’s a new and better s’mores in town!

Quick tip: Make sure the dough is really cold before baking but do not freeze it completely!
