The hardest part of this recipe will be waiting for it to set in the chilled environment. Despite the robust ingredients, these are still delicate desserts that need to be fully chilled to be enjoyed. That being said, once they are all ready to go, dig in! These tasty treats won’t last long once you set them out. My kids were disappointed that they didn’t get any, so I see a new batch coming up in my future. Ingredients
1 box of lemon cake mix
7 tablespoons butter, melted (plus extra to butter hands)
1 tablespoon lemon juice
1 teaspoon lemon zest, optional
¾ cup granulated sugar, divided (add ¼ cup to batter, use the remaining sugar for coating the truffles)
Instructions
In a large bowl mix together cake mix, butter, lemon juice, and zest until the dough starts to form.
Form dough into 2 inch balls.
Roll in sugar sprinkles to coat.
Refrigerate to set or until ready to serve.
Serve chilled.

Quick tip: If the dough mixture is too crumbly as you mix, add more melted butter a little at a time till it all starts to hold together.
