I love cheesy potatoes as a side with my dinner, but I need an easy recipe that I can mix together quickly. This Gooey Potato Casserole has been the answer to my prayers.
It’s melty and extra cheesy. All I have to do is combine the ingredients in a bowl, and then it all bakes in the oven for about an hour. Add a little bacon, and it can even make an excellent breakfast casserole!
You can cut the potatoes in any way you like – you don’t have to use only hash browns. Plus, you can pick your favorite cheese too!
Ingredients:
1 pound processed cheese
2 cups mayonnaise
1 (2 pound) package frozen hash brown potatoes, thawed
1 white onion, chopped
1 (3 ounce) jar real bacon bits
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
In the microwave, melt cheese in a large microwave-safe bowl. Stir in mayonnaise, potatoes and onions. Spread in a 9×13 inch baking dish and top with bacon bits.
Bake in preheated oven for 1 hour, or until hot and bubbly.
