Never Wait Around on Cookie Season Again
I admit that despite the constant nag to buy cookies in every direction, I love Girl Scout cookie season. Primarily because it means cookies! Thin Mints are great but everyone knows that Samoas are the best. If you can’t wait till Girl Scout season like me, then it’s time to dig into one of my favorite recipes of all time: a three-ingredient ape of a Samoa that is actually pretty terrific. These cookies use dates, toasted coconut milk, and chocolate chips, to create a delicious vegetarian cookie that you don’t even have to bake!
That’s right, you get to avoid turning on the oven and this recipe is super fast to throw together. Just mix, freeze, dip, drizzle, and refrigerate, and you’re all done. Quick tip: To make this recipe appropriate for vegans, swap out the chocolate chips for a dark chocolate with no milk or butter.
