So what makes this corn casserole better than all the others? The blender. That’s right, using the blender is why this casserole is so creamy yet so full of flavor (don’t dilute the strong corn taste with milk or cream anymore!). Half of the corn is pureed together with eggs, butter and spices and then mixed in the casserole dish with whole corn kernels, cheese and bacon. The whole dish is then topped with buttery ritz crackers and more cheese (because you can never go wrong with more cheese).

About 30 minutes in the oven and this beautiful casserole is ready to eat. Creamy and sweet, salty and with a little bacon cracker crunch, this is going to be a corn casserole recipe you will need to keep on hand forever. Although it’s so easy to make, you will probably memorize the recipe after making it the first ten times!
