Did Ernest Hemingway Eat This?

Key West is an island city in the Florida Keys Archipelago. It is the southernmost point in Florida, and in the contiguous United States. On a clear day, it is said you can almost see Cuba, which is only 90 miles away. If the Earth was flat, you might actually be able to see Cuba from Key West, but since the Earth is round, You can only see about 3 miles before the curve of the Earth obscures everything beyond that horizon point.

Known for its pastel conch-style houses and its coral reef snorkeling and diving opportunities, Key West was the home to writer Ernest Hemingway and his 6-toed polydactyl cat, Snow White (whose descendants still live at the house and are cared for by the keepers of the Ernest Hemingway Home and Museum).  It was also the home of Jimmy Buffett, famous for his songs about the “island escapism” lifestyle.

This recipe, with its bright citrus and sweet honey taste combination conjures up images of island life there on Key West. Hot, sunny days with warm island breezes, and hot, sultry nights under the stars, standing at what feels like the very edge of the world. Oh, and drinking a margarita, of course!

Quick Tip:  To make this a complete meal, serve it with steamed or grilled veggies, or maybe a fresh garden salad. You could make a double batch of the marinade and use it as salad dressing.
