This recipe’s marinade is delicious, with its honey-lime base being complimented with both garlic and cilantro. If you are making skewers, alternate the chunks of chicken with colorful bell pepper chunks and cubes of mango. This will enhance the tropical flair of this dish. If you are grilling chicken breast halves, you could add some chopped mango to the marinade.

If you would like your chicken to be spicy, you have a couple of different choices. First, you could add 1/8 to ¼ teaspoon of crushed red pepper flakes to the marinade. A second option is to add jalapeno peppers to the marinade or even as chunks on the skewers.

 

INGREDIENTS

3 tablespoons soy sauce
2 Tbsp. honey
1 Tbsp. vegetable oil
Juice of 1 Lime
1 teaspoon minced garlic
1 teaspoon fresh cilantro, finely chopped
2 Tbsp. red bell pepper, finely Chopped
4 boneless chicken breast halves

 

DIRECTIONS

In a shallow bowl combine soy sauce, honey, vegetable oil, lime juice, garlic, bell pepper and cilantro, mixing well. Then choose the appropriate marinating and cooking method:

For Grilled Breasts
Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.

For Grilled Kebabs (or Skewers)
Cut the chicken into 1-2″ cubes, skewer onto bamboo sticks that have been soaked in water for 5 minutes, and marinate for at least 30 minutes.

Grill the marinated meats over medium high heat for 6 to 8 minutes on each side, until juices run clear. For the skewers, grill about 3 minutes per side, turning occasionally.

Quick Tip:  This recipe is also delicious if you substitute 2 lbs. of shrimp for the chicken. Shrimp cook very quickly, in 2-5 minutes, so you have to watch your grill constantly. Pay attention to the changing shape of the shrimp as they cook, and use the “alphabet method” to evaluate their doneness. If the shrimp looks like an “L,” then it is still raw or very rare. When it looks like a “C,” it is done. Shrimp having an “O” shape are overdone.
