The Best & Easiest Kind of Cookies EVER Invented!

Who wants a cookie? I do! Who, in their right mind, would turn down a cookie? This toffee butter icebox cookie that Trish has concocted is some seriously amazing cookie! It has taste, it has texture and even if it had wings, it couldn’t have flown into my tummy quicker!

I have fond memories, helping my great-grandmother make this exact type of cookie. Not this specific recipe, of course, because those were simpler times. The cookies she made were based on recipes handed down from her mother in the mid-1800s. We made sugar, cinnamon, and spiced cookies with nuts in them.

It was my task to very carefully roll the dough into log shapes that she then wrapped in plastic, which she considered “newfangled.” She would say, “Well, I never….”  I sat on my stool at her Formica-covered kitchen counter and waited for the dough to come down her cookie assembly line for me to roll. Ah, the memories!

And so it was that my fondness for shortbread-type icebox cookies was born. To me, a shortbread cookie is heavenly. They have this way of melting in your mouth, and they are perfect for dunking in a cold glass of milk.

Quick Tip:  One of the best features of icebox-type cookies is the fact that you don’t have to actually bake dozens and dozens of them all at once. Which is great if you are counting your calories and just need a taste of something sweet. Go to your freezer, pull out your favorite type and slice off one or two with a heated knife. You can bake them right along with that evening’s dinner!
