The first thing I thought when I saw his recipe was “I have to go get more cans of pumpkin right now”. These pumpkin cheesecake bites just look like a dream come true. Even just reading the name makes my mouth water- pumpkin (which I love) and cheesecake (which everyone loves) all put together and made into a truffle? I already know I am going to eat too many of these….
Tasty pumpkin spices and pumpkin puree and whipped together with cream cheese and white chocolate. Then, to make it even more magical, crumbled gingersnaps and graham cracker crumbs are added which just emphasizes the pumpkin flavor and makes these bites even more like a cheesecake. Dunked into white chocolate to create a nice, hard shell, you can take these truffles anywhere.
If you are a lover of all things pumpkin (like me!), then you have to stop what you are doing and make these truffle bites. We all know that not all pumpkin desserts are created equal but this one truly embodies the pumpkin spice craze. I made a batch and immediately had to make another so I strongly suggest doubling up on this recipe the first time- you won’t regret it!

Quick tip: Put a lollipop stick in the filling scoops before putting it in the fridge. Dunk the truffles in the chocolate using the stick and then serve as pumpkin cheesecake pops!
