An Unexpectedly Good Appetizer

What is one of the first “real foods” that babies start eating? Mashed potatoes! What is one of the last things elderly people are still able to eat, digest and enjoy? Mashed potatoes! Is it really any wonder, then, that we have a lifelong love affair with these mashed or whipped spuds?

But for all their popularity, you would think that creative cook everywhere would be coming up with clever adaptations to improve upon them or use them in new and unusual ways. Outside of the occasional potato cake made from leftover mashed potatoes, this is the first recipe I have seen that has used mashed potatoes as the basis for an entirely new dish.

This new little appetizer combines two things that most everyone likes:  mashed potatoes and ooey-gooey, melty cheese. Hooked already, aren’t you? Or at least intrigued? Seriously, just how in the world are you going to wrap mashed potatoes around cheese and then expect it to hold together through the frying process?

The magic to this has to do with the specific combination of mashed potatoes, eggs and flour. When you put these ingredients together, they bond, allowing you to easily encase a bit of cheese and close it inside by rolling it into a ball shape.

Quick Tip:  When you are frying anything in batches, the introduction of a new batch into the oil drops the temperature significantly. You need to maintain the temperature around 350 degrees F to get a good fried product. Trying to fry at a lower temperature will make your batch soggy and greasy instead of crisp. So you will either need to turn your burner temperature to a higher setting, or allow time for your oil to return to the proper frying temperature between batches. If you want to know when the oil is hot enough, insert a wooden spoon. If the oil bubbles around the handle, it is hot enough for proper frying.
