How Can Yo Go Wrong with Pad Thai?

My absolute favorite Asiantakeout dish is hands down Pad Thai. There’s something about the veggies paired with the peanut sauce and squeeze of lime with the light noodles. It’s like a pasta dish but not heavy with alfredo or marinara sauce.

I first had this particular dish at our neighbors house one night. I walked in and could smell the flavors – the same scent when you open that takeout box. Except with this smell, it filled the whole house. I walked in her kitchen and saw the masterpiece with the takout bags nowhere to be seen. She had made it at home!

It has all the flavors you want in this staple – the salty soy sauce, the crunch of the bean sprouts and the noodles coated in the yummy dressing. The recipe calls for chicken and shrimp, but that night she used extra shrimp that were on sale at the grocery store and it was just like our favorite Asian restaruant!

My kids aren;t fans of Asian food yet, so this is my go-to recipe for date night with my husband. Sometimes it’s nice to stay in and relax with some confort food!

Quick tip: Do not use crunchy peanut putter – you won’t have the same creamy consistency for the sauce.
