Healthy AND Tasty? What’s Not To Love?

Just about everyone loves lasagna. The trouble is, it takes a L-O-N-G time to make and it tends to sit pretty heavily in your stomach, even if you do manage to restrict yourself to eating just one piece. So you may have developed a love-hate relationship with lasagna over the years. You love to eat it, but you hate to make it. So you might always order it when you go out to an Italian restaurant, but you probably never make it at home in your own kitchen.

But what if there was another approach to lasagna that would, essentially, solve both of those problems with lasagna? Catalina’s fresh new take on lasagna does just that. She has lightened it up by using ground chicken instead of the normal greasy and heavier ground beef. She has also added spinach to provide a higher nutrient content.

She has left out the ricotta cheese, replacing it with thick layers of mozzarella – but you can serve it with a dollop of ricotta on the top, as pictured in the image, above. So you can still have the decadent tastes and textures of the traditional lasagna that you are used to, but just with a slightly healthier twist.

Quick Tip:  Want your lasagna to taste luxurious? Use full-fat mozzarella – the real thing. Many of the cheap, pre-shredded cheese isn’t real cheese, do it isn’t going to melt well or taste good.  Likewise, choose a high-quality marinara sauce.
