These Kentucky Brownie Bomb Bars are not exactly what is known as a “brookie” (a brownie on top of a cookie), because there is no cookie involved here. Instead, you have a gooey middle layer of sweet marshmallow crème. These brownies are topped with a version of a rice krispie treat, so maybe these are “krownies.”
Whatever you want to call them, just give them a try. Believe me, that crazed look of chocolate craving will leave your eyes. It is also a sure bet that the Chocolate Monster will settle down for a while so you can think about something else.
INGREDIENTS
Bottom Layer
1 Box Brownie Mix (follow box instruction fully and for cooking times.)
2 Large Eggs
¼ cup Vegetable Oil
¼ cup Water
Middle layer
1 Jar (198 g) Jet-Puffed Marshmallow Crème
Top Layer
2 Cups Semi-sweet chocolate chips
1 Cup Peanut Butter
3 Cups Rice Krispies
INSTRUCTIONS
Spray a 9×13 pan with cooking spray.
Bake Brownies as directed on box and let to fully cool.
Spread Jet-Puffed Mallow Crème.
Place Chocolate chips and peanut butter in a medium sized microwave bowl and microwave until well blended stopping at 1 minute intervals. Once melted stir in Rice Krispies and spread evenly over mallow crème.
Cover and chill for two hours before cutting into squares. Yields 24-36 bars depending on how big you like your squares

Quick Tip: You might want to use the back of a soup spoon sprayed with cooking spray to spread the various layers in this treat. The cooking spray will help keep the batter from sticking, and the back of the spoon can push the batter into the corners of your baking dish better than either a knife or a spatula can. When working with the marshmallow crème, it helps to heat the spoon in hot water first, dry it off with a paper towel, and then spray it with cooking spray.
