Two Crowd Pleasers Combine to Create a Monstrously Good Sandwich

Taco Tuesday is a serious affair here in my house, but could they have picked a worse night for turning this tradition into a reality? Tuesday is always a long day as work finally starts to settle in for the week, and I’d much rather make Pizza Delivery Tuesday a thing, saving the tacos for the weekend. But my kids can’t be swayed, so I’ve been looking for creative, faster ways to make tacos. When I found this recipe, I couldn’t believe my eyes.

Basically, you make up some taco meat, prep some toppings, and then pile it all into a grilled cheese sandwich. It makes it way easier and faster to serve than setting out a buffet of toppings, and I love the change of pace from our usual tacos. You can change up this recipe in many ways, from the type of meat you use to the toppings stuffed into the sandwich. This was a brilliant addition to our Taco Tuesday routine and I can’t thank the chef at Closet Cooking enough for sharing. Try this one out for your own taco night and I guarantee you’ll be sold on the grilled cheese version.
