Every now and then, I like to do something a little sophisticated in the kitchen. Most of the time, I am a fan of comfort food. Meatloaf, mashed potatoes, fried chicken, and gooey desserts are my go-to. But sometimes it’s nice to take a walk on the lighter side and enjoy the fresh flavors of summer produce. This recipe is something that I’d never heard of before, but once you dig in, you realize that you’re basically tasting a rustic, lighter calorie version of pizza. That’s how I sold it to my kids, anyway. Tomato pie is a great way to enjoy the summer produce, and it has fresh herbs and an impressive presentation. It’s perfect for serving to your most sophisticated friends for a light lunch, while secretly enjoying your pizza fix.
