Tomato Pie Is a Delicious Vegetarian Dish Even Meat Eaters Will Love

This Tomato Pie is Light On the Calories, Big on the Flavor

Every now and then, I like to do something a little sophisticated in the kitchen. Most of the time, I am a fan of comfort food. Meatloaf, mashed potatoes, fried chicken, and gooey desserts are my go-to. But sometimes it’s nice to take a walk on the lighter side and enjoy the fresh flavors of summer produce. This recipe is something that I’d never heard of before, but once you dig in, you realize that you’re basically tasting a rustic, lighter calorie version of pizza. That’s how I sold it to my kids, anyway. Tomato pie is a great way to enjoy the summer produce, and it has fresh herbs and an impressive presentation. It’s perfect for serving to your most sophisticated friends for a light lunch, while secretly enjoying your pizza fix.

Another great thing about this recipe that I really love? It’s easy! Just precook a pie crust, add the rest of the ingredients, and pop back in the oven. Just as light on the time requirements as the calories. It’s perfect for a quick weeknight dinner, especially if you’re doing a meatless Monday night! Big thanks go to the chef behind Simply Recipes for this awesome meal.

Quick tip: If you use a homemade pie crust for this recipe, freeze it first, and then press a sheet of aluminum foil into the crust, covering it completely, to prevent burning. Place some dry beans on top of the foil during the initial baking process to keep it in place.
