Tired Of That Traditional Green Bean Casserole? This Is Totally Different!

Then go ahead and make this casserole, instead of the traditional one, and sit back and watch the reactions. You could be starting a new family tradition. Yes, you will probably get some dirty looks from your Uncle Henry, as he just loved that green bean casserole of gatherings past.

Don’t worry, Uncle Henry will get over himself and forgive you once he tastes this new, and vastly-improved version. I think that you will find most people are going to be happy with the change of pace. It is so easy for us to get stuck in ruts in our lives. Eating the same thing over and over again doesn’t have to be one of them!

INGREDIENTS

1 6-oz. package Chicken stuffing mix
1 Tbsp. butter
6 boneless, skinless chicken breasts
½ tsp black pepper
½ lb. fresh green beans, trimmed, cut into 1-inch lengths
¼ cup flour
1¾ cups chicken broth
5 oz. cream cheese, cubed

 

INSTRUCTIONS

Spray a 9×13-inch baking dish with cooking spray. Set aside.

Make the stuffing mix according to package directions.

In the meantime, melt butter in a large skillet over medium heat. Season chicken with pepper and cook for 5 minutes on each side, until it is cooked through. Place chicken in a single layer in the baking dish.

Using the same skillet, cook the beans for about 6 minutes, stirring constantly, until they are crisp, yet tender. Sprinkle flour over the beans and cook an additional minute, stirring constantly, before slowly adding the broth, stirring to avoid lumps. Then add the cream cheese, stirring it until it melts. Spoon the green bean mixture over the chicken and put the cooked stuffing over the top of it all. Refrigerate up to 24 hours.

When ready to bake, preheat oven to 400 degrees F. Bake uncovered until heated through, about 30 minutes. Serve immediately.

Quick Tip:  If you want to freeze this dish, go ahead and make and assemble it, but freeze it prior to baking it. When ready to bake, thaw it and allow it to come to room temperature before baking.
